  3. Jessica! I had the same cupcake catastrophe when I was twelve. It also happened to be the bicentennial in 1976 and when it happened I totally freaked out and was screaming for my mom who was in the shower and came to my rescue buck naked!!!! To this day I'm not sure if I'm more horrified by my hair being wound up in the beaters or seeing my mother naked! Thank you for the recipe and the entertainment- you are darling!

  4. Those cookie bites look delicious! I'm going to have to try them. Jessica, I hear aqua faba (canned chickpea water) is what the vegan baking pros use to make things like vegan meringues and other super fluffy baked goods. Try it and let me know!!

By the way, you might want to consider trying a date syrup I use, which I really like. Its only ingredient is organic dates. It saves steps and has a consistent texture, like chocolate syrup.   6. Great recipe to try. It took me 5 years of being vegan to start baking like I used to enjoy, and I've found so many recipes work using flax meal eggs (soak 1T ground flax to 3T water per egg), or garbanzo bean water whipped for egg whites, and unsweetened applesauce for butter replacement. I don't avoid oils, so I usually use 50/50 plant oil/applesauce, but you can use 100%.

  7. I don’t like dates alone but I like larabars so I think I’m going to try these. The problem is I’d probably want to eat them all. I guess without the chocolate wouldn’t be too bad to indulge in.

  8. I didn't have any peanuts so I used almond butter and I don't eat chocolate (migraines) so I used Carob chips instead. I also baked them on a slower over…325 for 12 minutes and they came out just fine. Also, I used just my food processor because I don't have a hand mixer and that worked well. Thanks for an awesome sorta healthy treat. You two are the perfect compliment to each other…you guys rock!
